My first time grilling tuna & salmon. Do ya have to flip the fish? How long to cook? And also, I like the lemon-pepper & mesquite sauce flavors, know any recipes of that?
Yellowfin is hard to screw up…it’s delicious no matter how you prepare it.
Most Important Thing: make sure your grill surface is clean, and make sure it’s hot. Let the grill get good and hot for at least 15 minutes, then use your wire brush to scrape the grates. You want any little particles to be burned away.
Whether or not you’ve marinated the tuna, brush one side of it with vegetable oil just before throwing it on the grill. Put the oil-side down on the grill first, and while that’s cooking, brush the other side.

Grill the tuna (like I said, High Heat) for 4 minutes per side. Flip it exactly ONCE. This is assuming steaks that are about 1 inch thick. Add 30 seconds (per side) for each additional half-inch of thickness.
If you have a REALLY thick steak, like 3 inches, give it 5 minutes per side (any longer, and the outside will be burnt). The center of the steak will still be pinkish-red (medium rare), which is the best way to eat it.
